Smoothies


Smoothies are quick, easy and full with your daily allowance of fruits and vegetables. Depending what ingredients you use, a smoothie may contain all four food groups!

You can add nuts to any smoothie, such as almonds, for the meat and alternative category, and seeds, such as chia seeds, to fit the grain products category. By adding ingredients like nuts and healthy grains, your smoothie will keep you full for a longer time!

Nutella and Banana Sushi



Ingredients:

2 tortillas 
4 tbsp Nutella
2 bananas




Instructions


  1. Place bread on a cutting board and spread with Nutella 
  2. Peel banana and lay in on the edge of the tortilla 
  3. Roll banana in tortilla 
  4. Slice into rounds and arrange on a place with the cut edge facing up


Healthy Monster Cookies

Ingredients

·       3 cups old-fashioned oats gluten-free
·       1 cup peanut butter* smooth and slightly runny
·       1/2 cup pure maple syrup
·       1/3 cup mini M&Ms
·       1/4 tsp salt




Instructions

1.    Combine all ingredients in a large bowl and stir until well mixed.
2.    Scoop 1 ½ - 2 tablespoons of mixture at a time. Press mixture between your hands multiple times to get it to stick together. Roll into a ball and place on a cookie sheet.
3.    Repeat with remaining mixture.
4.    Refrigerate healthy monster cookie bites for at least 30 minutes before serving.
5.    Serve at room temperature and enjoy!

Recipe Notes

- Heat peanut butter in the microwave for 15-20 seconds
- You can swap the M&Ms for chocolate chips or nuts

Breakfast Banana Split




  

     A healthy breakfast that feels like a treat! Bananas, frozen yogurt, fresh fruit and homemade granola.






Ingredients:

·       1 banana
·       ½ cup strawberry greek yogurt
·       ¼ cup blackberries
·       ¼ cup raspberries
·       ½ cup granola
·       mini chocolate chips for garnish

Instructions:
1.    Prepare yogurt:
2.    Place container of yogurt in the freezer until firm, not frozen solid, just scoop-able.
3.    Scoop out two scoops of yogurt and place each scoop in a separate paper muffin liner.
4.    Put back in the freezer until ready to use.
5.    Split banana in half.
6.    Add 2 scoops of frozen yogurt
7.    Add berries, granola and chocolate chips

Broccoli Cheese Bites



Ingredients: 

16 Ounces of cooked broccoli 
1 cup of Italian bread crumbs
1 1/2 cups of shredded cheese
3 eggs
Salt, pepper and garlic to taste 

Instructions:

1. Preheat your oven to 375 degrees. Thaw 16 ounces of broccoli (or cook fresh broccoli until soft), and chop into small pieces. Combine your broccoli, 1 cup of Italian bread crumbs, 1-2 cups of cheese, 3 eggs, and the seasoning of your choice (I used about half a teaspoon of garlic salt) into a large bowl.

2. Mix together well with a spoon, or just go for it and use your hands.

4. Bake in the oven at 375 degrees for 20-25 minutes (depending on how large you make your patties), and flip half way through

5. Remove from the oven and let cool for a few minutes. Serve with ranch or your favorite dipping sauce. I made 2 batches, and the first batch was gone before I could get the second batch out of the oven!
